If all you’ve ever done with a box of cake mix is follow the directions on the back, you’re missing out. By daring to go off-label with your cake mix, you can whip up a sweet baked treat truly takes the cake.
Here are just a few of our favorite ways to break away from the box and elevate your basic boxed cake mix.
The next time you bake a devil’s food cake or chocolate fudge cake mix, add some strong coffee in place of the water to take the chocolatey goodness up a notch. You can also add a tablespoon of finely ground espresso powder to any chocolate cake mix to produce the same effect.
You read that right. Believe it or not, adding a tablespoon of mayonnaise to any cake batter will make it outrageously moist and creamy.
Forget all the ingredients on the back of the box and simply stir a can of soda into your powdered chocolate cake mix. Bake it as directed, frost it with your favorite frosting, and you’re done. The result is a rich, complex cake you’ll want to make again and again.
Make pumpkin spice muffins
For a delicious alternative to pumpkin pie, take a box of spice cake mix and add a can of pumpkin puree and nothing else — not even the other ingredients that the box calls for. Make cake mix cookies
For a sweet handheld indulgence that will wow everyone at the office party, make a batch of cake mix cookies. Simply stir 1/3 cup of vegetable oil and two eggs together with any cake mix. Spoon the thick batter into little balls on a greased cookie pan and bake at 350 degrees for 8-10 minutes, or until the cookies start to brown at the edges a little. You can also refrigerate the dough for 15 minutes before baking, form it into one-inch dough balls and roll them in sugar for added sweetness and texture.
