If you don’t think cookies go with an Independence Day celebration, then you’ve never sandwiched a huge scoop of ice cream between two Oven-Fresh Chippies from Mother Rucker’s Sweets. The result is a heavenly ice cream sandwich that’s a creamy treat on any summer day.

Vanilla or chocolate ice cream are by far the most popular flavors for the cold creamy filling, but you can make your sandwiches extra patriotic for the Fourth of July by following one of our favorite recipes for red, white and blue ice cream sammies below.

The easiest way to make your patriotic ice cream sandwiches is to buy a box of ice cream that can be completely unwrapped and cut into slices. Choose vanilla or coconut ice cream for the white layer, and strawberry or cherry ice cream for the red layer. Alternatively, you can make your own homemade ice cream for an even tastier sandwich.

The result is a colorful confection made of wholesome ingredients that will please your friends and family this Independence Day. Wrap the sandwiches in plastic wrap, pack a cooler with ice and take the treats along to a fireworks display for a bang of a good time.

Patriotic Ice Cream Sandwiches


14 Mother Rucker’s Oven-Fresh Chippies or Peanut Butter Oatmeal Cookies

Half-gallon box ice cream

Bag of frozen blueberries


Unwrap the ice cream and place on a cutting board. Cut the ice cream into half-inch layers and place the layers out flat. Use a knife or round cookie cutter to cut seven circles out of the layers of ice cram—the circles should match the size of the cookies. Work quickly to avoid melting. You’ll need seven circles of white vanilla and seven circles of the strawberry or cherry ice cream.

For each sandwich, place a circle of vanilla ice cream onto the flat side of a cookie. Then place a cherry or strawberry ice cream circle against the vanilla layer. Top the ice cream with another cookie and press the sandwich together.

To complete the patriotic color scheme, press blueberries into the sides of the ice cream middle, evenly spacing each blueberry for the best effect.

Place the sandwiches on a tray and chill in the freezer until firm. In about an hour, they’ll be ready to eat. To save them for later, wrap them in plastic wrap and store them for up to a week in the freezer.
