After a frigid few months, springtime is finally in full bloom! Newly flourishing gardens aren’t just a treat for our eyes – they can also provide yummy treats for our table, too. But beyond salads and entrees, many gardens give us garnishes we can use to enhance the already-tasty desserts we make at Mother Rucker’s Sweets. Here are some of our favorite combinations of goodies and garnishes:
Chocolate-covered mint leaves and Cocoa Cookie Brittle atop chocolate mint gelato. This simple snack is as easy to make as it is delicious. Using a small pastry brush, coat the underside of the mint leaves with melted semi-sweet chocolate and refrigerate for about 10-15 minutes. When you’re ready, scoop some gelato into a bowl and place a piece of Cocoa Cookie Brittle and a few leaves on top for a refreshing, minty treat.
Cherry Almond Sugar Gems with candied pansies and whipped cream. Beautiful, edible and a springtime favorite, pansies are popping up all over the place! But did you know you can candy these big-eyed blossoms? This recipe shows you how. Just fasten a candied pansy to a Cherry Almond Sugar Gem, add a dollop of whipped cream and enjoy!
Buttermint Cookie Brittle with basil-infused cream. To make the basil cream, combine 3/4 of a cup of heavy cream, 1/3 of a cup of freshly cut basil and 2 tablespoons of sugar in a heatproof bowl. Place the bowl over a small saucepan of simmering water and stir until the sugar dissolves. Cover the bowl and refrigerate for at least 90 minutes. Then, strain the mixture through a fine sieve into a bowl and stir in 3/4 of a cup of mascarpone. Whisk the cream until medium-sized peaks form. Refrigerate until you’re ready to serve this dip with delicious Buttermint Cookie Brittle.

Lavender Vanilla Sugar Gems with a lavender honey glaze. Pluck a few sprigs of lavender from your garden and heat them in a sauce pan with some honey, letting the lavender steep before discarding the sprigs. Pour a little of the honey over your Lavender Vanilla Sugar Gem cookies and enjoy the fresh, floral flavor.
Lemon Cookie Brittle and Mojito Sorbet with a lemon and thyme garnish. Sometimes simple ingredients can work wonders.
